I don’t mind cooking, but I have to cook a lot; and when you have to cook a lot, the desire to cook at all gets to be a bit like having your wisdom teeth pulled over and over again…without the use of an anesthetic.
As a practicing plant-based eater, I often prepare two meals in my home—one for me and one for them. It’s something I’ve done for quite some time now, so I’m not averse to it, nor do I pitch a fit when I know it has to be done. That said, there are days when my meal goes to the wayside because I am way to zonked to fire up the pan again after preparing something for my crew.
Don’t get me wrong, that’s where pre-prepping has saved my life, but I’d be lying if I didn’t say there are weeks where pre-prepping just ain’t happening…and then what?
Well, that’s where convenience and quickness come into play, and the recipe pictured above (which you can find here) is 30-minutes of time and 5-6 days of breakfast for someone like me, and that’s something I can stand firmly behind.
